Zucchini Noodles

To spiralize a zucchini means you run it through the spiralizer.  This takes out the middle of the zucchini where the seeds are.  It also cuts it into small strings like noodles.  This zucchini noodle is a replacement for pasta, which has gluten.

The zucchini noodles are a base for a lot of the foods we will eat.  It’s a source of fiber.  You will initially make a big batch of it, store it in the freezer, and use it as needed. With a little prep work can have enough zoodles for weeks. The prep work is simply:  peel the zucchini, spiralize it, and let it sit to dry out.  We usually let it sit overnight but 3 hours would be fine.  After it is dry then bag it up in quart freezer bags and freeze it until you’re ready to cook it.

4-5 spiralized zucchini average will fit into a quart sized freezer bag.

If you spiralize 10 zucchini you will have about 2 quarts of zucchini noodles.

Cheesecloth or paper towels

For this you will need several paper towels to soak up the moisture from the zucchinis. I prefer to get the towels on a roll. Boxes of the blue or white shop towels work well. They are just thicker towels.

 

1. Peel the Veggies

     

Peel 10 Zucchinis. How much freezer space do you have?  You could do more if you had more freezer space.

2. Run the zucchini through the spiralizer

 

The spiralizer will remove the core. This takes a lot of the juice out of it. Discard this.

3.  Dry zucchini on towels cheesecloth

     

Place the noodles onto the cheesecloth or paper towels for around 4 hours to dry them out. You can leave them overnight if you want.  Cook with them that night or or freeze in quart sized bags.

Regarding salt.  We don’t use it to dehydrate the zucchini.  It works fine without it.

It’s time to ditch gluten!

           

These noodles, or some version of these, can replace all the pasta in your diet.  It something different.  It’s not pasta but it’s something much healthier.  This is only one way replace pasta and these little changes will make big changes.  Making little changes like this takes sacrifice but so what?  It’s not that big of a deal. We don’t need pasta.  Of course it tastes good – it’s engineered to taste good. The more you work at these changes the better you will feel.

                                   

Zucchini noodles are the base for all kinds of recipes.  Any Meat or veggie can be used with them.  Any sauce can be poured over them.  You can use them in an oven bake.  They can be sliced differently for different purposes.
